We've been in the kitchen and lovingly preparing Harry's takehome convenience meals over this time. Who doesn't love a good cook up?
One of our absolute comfort faves is Tuscan Chicken Fettucine.
You can grab all the ingredients in store if you dont have them at home, and wow your SO, family or just yourself with a new dish to try as the weather cools down.
Tuscan Chicken Fettucine
340 g fettuccine or linguine
4 slices bacon, chopped into thin slices (personal choice here, Harry likes squares, Larry likes thin slices)
450 gms chicken tenderloins or chicken breast, cut into thin slices (same deal here)
2 cloves garlic, minced
1/2 medium onion (your choice here, goes well without also)
6 cherry tomatoes,chopped into quarters
1/4 cup of sliced semi dried tomatos
Salt and Pepper to taste
1 cup heavy cream or cooking cream
140 gms or a decent handful of baby spinach
3/4 cup parmesan
3 tablespoons chopped fresh basil
1 Bring a large pot of salted water to a boil.
2 Place the bacon in a large, cold frypan, then cook over medium-high heat, stirring occasionally, until crispy, about 8 minutes; transfer to a plate with a slotted spoon. refresh the pan and add a dash of olive oil.
3 In a large pot, cook the fettuccine according to package directions; drain
4 Sprinkle the chicken lightly with salt and pepper and add to the pan in a single layer. Let cook, undisturbed, until golden brown on the underside, 2 to 3 minutes. Continue to cook, stirring occasionally, until cooked through, about 4 minutes more. Transfer to the plate with the bacon
5 Reduce the heat to medium and add the garlic (and onion if you are using this), stirring, until fragrant, about 1-2 minutes.
6 Add the tomatoes and cream and bring to a simmer, then add the spinach and stir until just wilted.
7 Add the bacon, chicken, fettuccine and Parmesan and toss with tongs until well coated 8 Sprinkle with basil and serve.
Sounds like - Upside down Sauvignon Blanc would compliment this dish perfectly, should you be looking for a nice drop over dinner.
